  1. Quinoa Salad! - my friend Derek told me about this and it's so fresh and healthy. Basically, cook up some quinoa, and also cook asparagus (cut prior to cooking) & peas. Add halved cherry tomatoes and cut avocado. Season to taste. Scrumptious!
